Today I want to chat about Kombucha. That is obviously utterly unrelated to these Banana Oatmeal Cookies, however I understand you won't obey.

Let me start by stating that my husband beverages apple cider vinegar mixed with warm water daily to reduce inflammation or something like that.

He claims it is magical. I claim it is nasty.

While I understand this is going to seem spectacular (because it is), I actually dry heave in the sight and smell of his morning ritual to a daily basis. He loves that about me personally.

Based upon this reaction, one would think I would stay far away from Kombucha, correct? I suggest, after all, it certainly comes with a vinegary tang.

However, for whatever reason, I keep trying it. I Wish to like it SO DANG BAD.

I like these cookies a little on the undercooked side, so that I bake them for 9 or 10 minutes. If you want them to be cooked through, I'd take for 10-11 seconds.

These cookies are a fantastic way to use up those super ripe bananas sitting on your counter tops at this time. I will not even tell anyone they're not actually breakfast cookies. Enjoy!




1/2 cup unsalted butterat room temperature

1 cup packed light brown sugar

1 large egg

1 1/2 tsp pure vanilla extract

1 cup all-purpose flour

1 tsp baking soda

1 tsp salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats

1 cup semi-sweet chocolate chips


Preheat oven to 350°F.

From the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl with an electric mixer, beat the butter and sugar till light and fluffy, about 3 minutes.

Scrape the sides of the bowl and mix in the egg until fully incorporated. Scrape down the sides of the bowl again and add the mashed bananas and vanilla.

Gradually add the the flour mixture to the banana mixture and blend until just combined.

Scrape down the sides of the bowl and then stir to recombine.

Use a moderate cookie scoop (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and gently press on the tops of each cookie with the bottom of a drinking glass. Considering these cookies don't spread considerably, this can help give them a traditional cookie shape.
