Today I want to chat about Kombucha. That is obviously utterly unrelated to these Banana Oatmeal Cookies, however I understand you won't obey.

Let me start by stating that my husband beverages apple cider vinegar mixed with warm water daily to reduce inflammation or something like that.

He claims it is magical. I claim it is nasty.

While I understand this is going to seem spectacular (because it is), I actually dry heave in the sight and smell of his morning ritual to a daily basis. He loves that about me personally.

Based upon this reaction, one would think I would stay far away from Kombucha, correct? I suggest, after all, it certainly comes with a vinegary tang.

However, for whatever reason, I keep trying it. I Wish to like it SO DANG BAD.

All these Banana Oatmeal Cookies are super simple to make and filled with banana flavor.

I am literally a marketer's dream because each and every time I see someone I know loving a sip, or even simply denying their favorite brand and flavor with a boomerang on Instagram, I am all,"Maybe you will actually taste decent!" .

Just imagine me with air quotes around the term enjoying cause I find it difficult to believe this stuff is actually enjoyable in almost any sense of the word.

And spoiler alert. Not one of them taste great. None.

Even the ones which people claim are mild are a big no-go for me. They taste like freaking sweet vinegar.

I'm basically sure that anyone who drinks this fermented tea stuff gets zero taste buds, or badly awesome ones.

I've literally tried every single brand that my regional market conveys and I HATED, not disliked, HATED each one.

Yes, I know hate is a really strong term, but there's really no other way to describe my feelings towards kombucha. And I just had to tell y’all my true feelings on this one. Who is with me?

They have the ideal quantity of banana taste and a lovely chewy feel thanks to its oats. The chocolate chips are simply an extra bonus.

I like these cookies a little on the undercooked side, so that I bake them for 9 or 10 minutes. If you want them to be cooked through, I'd take for 10-11 seconds.

I will say that the oats makes them look like a breakfast cookiecutter, so they are all sorts of amazing having a cup of tea or coffee first thing in the afternoon.

I'd add some chopped walnuts to a batch rather than chocolate chips, but everybody definitely chosen the chocolate chips over the nuts.

These cookies are a fantastic way to use up those super ripe bananas sitting on your counter tops at this time. I will not even tell anyone they're not actually breakfast cookies. Enjoy!

BANANA OATMEAL COOKIES



PRINT RECIPE

INGREDIENTS:

1/2 cup unsalted butterat room temperature

1 cup packed light brown sugar

1 large egg



1 1/2 tsp pure vanilla extract

1 cup all-purpose flour

1 tsp baking soda

1 tsp salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats

1 cup semi-sweet chocolate chips

DIRECTIONS:

Preheat oven to 350°F.

From the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl with an electric mixer, beat the butter and sugar till light and fluffy, about 3 minutes.

Scrape the sides of the bowl and mix in the egg until fully incorporated. Scrape down the sides of the bowl again and add the mashed bananas and vanilla.



Gradually add the the flour mixture to the banana mixture and blend until just combined.

Scrape down the sides of the bowl and then stir to recombine.



Use a moderate cookie scoop (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and gently press on the tops of each cookie with the bottom of a drinking glass. Considering these cookies don't spread considerably, this can help give them a traditional cookie shape.
